How to use it
Dissolve 145g of dry mix thoroughly into 2.5 cups of water, fruit juice or stock. Inject cold into 5-7Kg of meat. Rest @ 0-4°C for 4-6 hours.

About Injections: A general intro
BBQ injections are used worldwide by Competition BBQ teams and BBQ enthusiasts alike, to achieve perfectly tender and moist meat with every cook. This is achieved primarily through the use of phosphates which can bind moisture within the protein, which helps prevent meat from drying out during long cooking cycles.
Injections are applied using a BBQ Flavour Injector (Syringe) which can be found at any good BBQ store. Using a grid pattern at roughly 2cm intervals for consistency, the solution is injected throughout the meat for even and predictable flavour.
